PacificSource to Sponsor Healthy Tailgating Party Featuring Samples and Recipe Cards for Beaver Fans at Nov. 1 Game vs. USC

OSU Associate Director of Dining Services Kerry Paterson to Prepare Winning Recipes From Moore Family Center’s GridIron Chef Competition at Pre-Game Event Outside Reser Stadium

(SPRINGFIELD, Ore.)—In an effort to promote healthier eating on game day, which is often characterized by nutritionally lacking foods high in fat and sugar, PacificSource Healthy Life in conjunction with the Moore Family Center for Whole Grain Foods, Nutrition and Preventive Health, OSU Catering, University Housing and Dining Services, The College of Public Health and Human Sciences, and OSU Healthy Campus Initiatives, will be preparing and offering free samples of delicious and healthy dishes to tailgaters before the Nov. 1 home game against the visiting Trojans of USC.

Beaver fans can stop by the PacificSource Healthy Life Vehicle located at Reser Plaza from 3:30 to 6:00 pm on game day to sample Beaver Fan Black Bean Quinoa Salad and Heavenly, Healthier Layered Dip – winning recipes from the Moore Family Center's recent GridIron Chef Contest – while learning how to prepare a healthy tailgate snack. In addition to sampling nutritious fare, OSU faithful can take home recipe cards for each menu item and enter a drawing to win a gas grill courtesy of BiMart.

Kerry Paterson, OSU’s Associate Director of Dining Services and a 25-year culinarian, will also be on hand to serve samples and share healthy recipe tips. 

“Healthy eating on game day can be challenging, so we’re offering samples that are not only nutritious, but delicious and energy-packed, too,” said Alexa Shook, director of Healthy Life for PacificSource Health Plans. “Replacing traditional fat-laden dishes with healthier options like quinoa and sweet bell peppers are fantastic choices that will give fans plenty of energy to cheer on the Beavers all game long.”

The Beaver Fan Black Bean Quinoa Salad created by College of Public Health and Human Services student Bethany Harmon, and the Heavenly, Healthier Layered Dip created by OSU staff member Julie Jacobs, were the winning recipes from the recent GridIron Chef Contest hosted by the College of Public Health and Human Sciences’ Moore Family Center.
